Can you believe we are on the last HHM of February already? I'm late putting this up because I dozed off after my bible study this morning. I thought I'd take a little cap nap but when I awoke an hour had past, I guess I needed it, I  hadn't been sleeping well because my daughter was out of town and you know us mommas, we have to know all our little chicks are safe. So I had to move double time and then got into a cleaning frenzy. before I knew it kiddos were home from school. so here I sit while they do homework taking a break with a tall glass of iced milk and my PB&J : )

The Weather... 71 this Texas weather is so unpredictable one day chilly, one day hot.

Such a great movie! "Please God Just one more" I really wanted this movie to win picture of the year last night. btw what did you think of the La La land mix up at the end-Boy these award shows have been slacking.

Good Morning, Does anyone else feel like the week flew by? I hope you all enjoyed Valentines Day. We celebrate as a family, and I wouldn't have it any other way.

The weather... right now its in the low 40's -which means I made my son change from his shorts into pants-he was not a happy camper, I could tell by the way he slowly said  Yes Ma'am  then hung his head as he went back into his room to change, which made me smile thinking of when our children were young and we had to scold them but they were so cute we had to try very hard not to laugh.


On my bedside table... My barely touched reading pile, lamp, lotion, clock.


On my T.V... Little House On The Prairie We are now on Season 2 and my hubby says I've got him hooked on it -I am baffled how he never watched it growing up. I loved the episode called Harvest of friends where Charles works 2 jobs but gets hurt and the men of the town all come to help him. I also forgot about all the guest stars like Sean Penn



On the menu for this week...
Our menu changed a bit last week due to my son staying home sick one day and hubby wanting 8 can soup last night.  It should be easier this week but I find myself not so excited. I feel like I lose my mojo if my menu plan changes but just gonna roll with it.


M- Spaghetti with meat sauce, toasted bread, and Green Salad.
T- C/P meal moved from last week-Pesto chicken
W-Cheese Enchiladas, rice & beans
T-???
F-Pizza & Salad
S-???
S- C/P meal moved over from last week-BBQ Chicken


P.S. I'm still dreaming of this Chicken parm. from Olive Garden ...




On my to do list... Laundry, Dishes, and a few chores. I feel a bit burned out today as I've been having Migraines on and off.


What am I creating... Not much as I'm struggling with getting my tension right. And am in a planner funk at the moment.


Looking forward to... My daughter coming home from her robotics competition , They advanced and will be traveling to Lubbock -she hasn't even left yet and I miss her. She is always so busy,  I think Kids now a days hardly have any down time. One of the reasons I like to hang out at home. Plus I am excited for her but also dreading her going off to college next year.


Looking around the house... NOPE lol it's clean but I'm just not feeling it. might be the fact that we have tons of valentines candy everywhere.

Potato Soup

Today I am Sharing  a yummy potato soup recipe I made this week. It's so good! Plus it doesn't take long at all to whip up, Perfect for a cold windy day. The recipe is by Laura Vitale - every recipe I have tried by her has been a hit. I will share link if you would like to watch her do her magic...

The only difference in mine is I used what I had on hand... 
2% Milk and I omitted the Green Onions.

What You'll Need...
4 Potatoes - peeled and diced into 1/2" pieces
1 Yellow onion - diced
4 tbsp. all purpose flour
4 tbsp. unsalted butter
8 slices of bacon
3 cups chicken stock
3 cups of whole milk
1/2 cup of sour cream
1&1/2 cups shredded sharp cheddar cheese
chopped green onions
salt and pepper to taste

Directions...
In a large Dutch oven or soup pot, cook the bacon until it becomes nice and crispy. Remove to a paper towel lined plate, set aside.

Discard any fat that the bacon rendered, add the butter and onion to the pot and sauté till the onion becomes translucent and develops a bit of color, about 4-5 minutes.

Add the flour and stir constantly for 1 minute, add the milk, stock and potatoes bring to a simmer, cook for about 20 minutes or until potatoes are tender.   

Add the sour cream, cooked bacon (cut into pieces) and cheese, stir everything together and cook for 5 minutes more.

 Adjust the seasoning to taste and serve, sprinkling some chopped green onion and cheese over top.

I gasped when I saw the complete set in my Library,I've Always Loved and am Loving re-watching from the beginning, I don't care how many times I've seen these episodes they still touch me and I still cry at both sad and heartwarming.  I still think our world needs more Ingalls and less Mrs. Olson's  lol

notice the huge needles, I got them for Bella she fell in love with the YouTube channel: WOOLANDTHEGANG she wants to make a chunky blanket. So I made her a deal, learn it and I'll get you the $20 needles and yarn. but for now lets stay at the Walmart $5 & under budget lol

Listening to Records and thinking about me and my Daddy going to Licorice Pizza record store in California then coming home and listening and singing to together - My Daddy has a recording of me singing Patsy Clines Crazy and if anyone ever heard it - I would die of embarrassment  like totally fer sure dude! ok maybe not die but my Cheeks would be VERY Red lol but seriously isn't she Great and Crazy is such a great song!
